Day 1

Yesterday was a great day.  Probably some of the nicest weather we have had all year.  Did my official weigh in yesterday when going to the gym for my quick morning workout.  Didn’t want to push it too hard since I was going for a hike up Rattlesnake Ledge.  I got up early and even made paleo compliant banana raspberry bread.

Breakfast : 2 eggs and 2 strips of bacon

Snack : banana bread

Lunch : green chili turkey burgers topped with some homemade guac (not tequila guac) and an orange

Snack : handful of almonds at the top of Rattlesnake Ledge

Dinner : green chili turkey burgers topped with some homemade guac and an orange (I was lazy and tired)  J

Snack : a slice of paleo banana bread with a handfull of raspberries
Week 1 weigh in : 268 lbs

Paleo Challenge Eve

I have dabbled here or there with paleo for about 2 months now.  It's definitely not a diet but more of a life style change.  Let me assure you, this will be no minor feet.  Some of my favorites foods are bread, pasta, and beer.

Eating paleo though, does have it's advantages...  Anyone out there who doesn't enjoy eating eggs and bacon every morning for breakfast?  The challenge will be in sticking to the plan while at work.  Creating meals for both breakfast and lunch the night before will be a key factor in the success of this challenge.

The Plan:
Go 60 days on the paleo diet.  And yes, I am including beer on the naughty list of things i will not be partaking in...  (at least i still have tequila...)  ;)

I will be weighing in every Sunday and posting it here along with hopefully daily updates on what I have eaten and any activity I have done.

Wish me luck and i will see you all on the flip side!  (hopefully the lighter side)
